Vineyards:
On the hills and in flatter valley floor vineyards, the best terroir for white grapes, using guyot and single Trentino pergola training systems
Soil:
Dry, middle consistency, limestone and chalk soil
Harvest:
The grapes are picked by hand between the end of August or the beginning of September
Fermentation & and ageing:
White winemaking and gentle pressing of the grapes.
All musts (chardonnay & pinot noir) are fermented in stainless steel, where they remain until the creation of the cuvée.
The wine undergoes second fermentation in the bottle, followed by traditional ageing on the lees for at least 30 months.
Bottle ageing:
After disgorgement, for up to 3 months
When to drink it:
Fresh and crisp when still young. A long ageing. yields citrus and toasty notes
